I'm looking to buy a cosine wave inverter but they all seem to be either square-wave or sine-wave. Anyone know where I can get a cosine-wave inverter?

A cosine wave is just a sine wave displaced by 90 degress. What are you trying to do?

Indeed - and since there's not really anything to which to reference the phase in an inverter, it would be impossible to distinguish between a sine wave and cosine wave output!
