Damp AND Making good.

I have just started work on my new old house (1900's), I knew it had a bit of damp when I bought it, I have hacked off the old plaster where the damp is, I know it should have been at least a metre, but it had blown so i took it all off. The questions:

1) What should I treat the damp with, where can I get it and can I hire the injecting equipment?

2) What is the best method to repair the wall after this has been done, is it plasterboard using dot and dab, or use a few coates of bonding before a final few coates of multifinish?
