The explosion is caused by the CO2 coming out of solution rapidly, causing a huge build up of pressure. I can't really think of any reason why this would happen, and I've not googled for possible explanations.
I have heard of incidents where people have received nasty injuries when opening carbonated drinks due to a far greater then expected gaseous expansion caused by the initial depressurising of the bottle, this leads to the top of the bottle coming off at quite extraordinary speeds.
