Ballofix isolation valves (type with slotted actuator, as in your pics) are notorious for leaking from the slotted screw, when they are turned off and back on.

If this happens, best to change them.

Fridge drinking water often needs filtering to stop limescale and other debris from blocking the small waterways that make up the delivery system within the fridge/freezer.
 
Thanks for the advice - yes the fridge has it's own separate filter :)

In the end patched it with some speed fit.
Even despite it being snug watertight and lined up I am struggling to tighten this speedfix connector up anymore where it connects to copper any more it feels quite stiff. Does all look ok?

If you're referring to the speedfit collet, then it only tightens to close the gap between it and the mating face.
It's not compression, it is to lock the release ring out which, in turn grabs the pipe.
