What do you guys do about getting people to sign contracts for jobs? Do you get them to sign an agreement on the work to be done before you start? Or get them to sign to say they are happy with the work done when you are finished? On larger jobs it seems normal to have a contract or work agreement signed by both parties, but what about smaller jobs?

Always have something in writing. In the event of a claim against them, you can demonstrate to the court that there is a simple contract in existence.

Set up a simple form that you can fill in with the scope of work, terms of payment and amount and any other relevant data, get the client to sign. No argument then.
 
i always do a written quote, big or small, and they always sign it before hand. if they dont, no work.

Specified quote, followed by specified order confirmation which the client signs. End of the job: new letter with original amount agreed, specified recap of payments already made, other materials, labour agreed on during works, amount due. This letter is handed to the client by the fitter (my better half ;)) who knowns what's agreed before, what's used during the job and what other items are discussed during the works.
Never had a problem.
