Sorry for being dumb but what does the immersion heater do and will I lose anything by turning it off? Assume its there for something

It's for when you have no gas or boiler packs up. But.... It still has a stat within it and should shut off if water temp above set point.

However.... It shouldn't be left constantly on as it will keep using leccie when you don't need to, depending on hysteresis and stratification.

If the motorised valve controlling the supply from the boiler to the cylinder coil is worn out, it may allow the cylinder to be heated whenever the radiators are on, even if the cylinder is already hot. You can detect this by feeling the pipe coming out of the valve. The valves commonly last 10 to 20 years. The water part of the valve can be worn out even if the electric motor part is working or renewed.

So hot water off, but heating on, check pipe temp?
 
If you take a few more photos of the cylinder the immersion(s) can be identified and the control thermostat which may be in a separate "box" attached to the cylinder, the setting can then be checked and, if, required, reduced, you may well need this immersion if your boiler breaks down and its better to have the correcte temperature setting (now) rather than trying to set it in then.

It could be, electric immersions aren’t accurate.

But the element might only be quite short so it may only heat the top bit of water up -so it might not have ever come on, although if your programmer is set to have timed hot water the immersion might have kicked in sometimes.

Anyway best off so it's not costing you any electric

It all depends on setting, age and accuracy of the thermostat within the immersion.

If it's set to 60° or below, it won't energise if water is at or above that temp. So, if cylinder stat is calling for heat via gas, to heat the coil, immersion will remain offline.
Once gas stops being used and water in cylinder cools, immersion will take over to keep water at temp set via immersion stat.

Its in the second photo from the top, with a black cap. Switch off the immersion and remove the nut then the cover and take a photo.

Could be the answer... Just knocked it down to 50ish but turned off anyway

Realistically how long will it take the water tank to drop 10 degrees or so for me to check the water temp? Assume it could take a while

It could take hours unless you run off some hot water, depending on what the water temperature is at the cylinder stat.
