insulating roof light walls in attic

Victorian semi with roof light. In the attic, the roof light walls are made of lath and plaster on 70mm studs, but there is no insulation.

Considering installing 50/60mm kingspan between the studs to approx depth of studs, then fixing 25mm kingspan over the whole lot, attaching the boarsd to the studs. Is it worthwhile insulating over the studs or am I better to just use 75mm / 100mm between the studs?

There is also an old chimney stack reduced to below roof height, but again, not insulated. Was going to use 50mm kinspan to box it in and place a lid on it. Again, is this worthwhile, or am Ibet leaving it uncovered?
