As for the phrase "remove from heat", there is a reason for this. Switching off you may think is safer, but the food will still need moving, but the reason is that the food needs to stop cooking quickly, which it will if taken off the heat. Switch off and the cooing process will carry on for a significant while, depending on the type of hob.
