The baffle plate is steel but I guess the back of the stove which has the stud probably cast iron. Can cast iron be drilled? If it can I could drill out and use a bolt (probably not able to thread the back plate). Any ideas welcome. Thanks.

For sure, cast iron can be drilled and / or tapped quite readily.
