Only way to do this with vaillant controls as I see it is to use a Vaillant 430 WC controller with a VR61 mixer module and 2 VR10s. This would be an excellent combination of controls, but....expensive and needs to be installed ideally by someone who understands the setup.
the only way, means the only way. You cannot use a 360 with 2 zones in any way shape or form. it will not work, not properly anyway. You will never be able to have completely seperate control over both zones.
Either do what I suggested or scrap the 360.
UPDATE-
I examined the 2 two port valves, it appears that the one which controls the attic is connected to the Salus transmitter, and the one which would control downstairs is not wired and left in a open position. The Vaillant transmitter is connected directly to the boiler.
Can the 360 transmitter be connected to the valve?

The reason why the valve for downstairs is left opened and not connected is because initially the installer was going to install two Salus programmable stats, but we chose the VRT360F for downstairs because that particular controller offered a timing program for the Storage tank; we didn't want to be heating the storage tank at night.
When the heating turns on, the attic is first to reach temperature and the two port valve closes, the boiler continues heating downstairs until the downstairs reaches the set temperature (21'c, if that helps), then the boiler shuts off. If the attic starts calling for heat and the downstairs is satisfied the attic will not heat up until the downstairs starts calling for heat.
I think it would be a good idea to tell the installer to sort out the problem as we have not payed yet; we don't have to until we are completely satisfied.
Sorry but I have another question,
How efficiently do you think my system is running with a flow temp of 45-50 degrees and storage tank set at lowest possible level- 55 degrees?
When outside temp was 5 degrees the flow temp was set to 55 degrees and the house was warm and toasty within about an hour.
It sounds as if you have a well insulated house and good sized rads.
The boiler will be mostly fully condensing and will be well over 90% efficient.
Just what everyone should have.
Make sure you dont pay the full cost until the installer has sorted out the controls. Its his responsibility and difficult as it apparently may be to sort it out it should be possible.
If the Vaillant kit really will not do this then I would fit two two port valves after your "open" one each supplying the two zones but individually controlled by the respective stats but there should be a more simple solution.
You either have to rewire using standard controls which will not give you remote access to the preheat

wait until Vaillant get round to launching their multizone controller in the UK
Our new Vaillant expert MickyG seems to be a bit vague on the actual date of introduction. Rather than take hearsay I suggest you call Vaillant on Monday to hear it from the horses mouth.......
My suggestion would be to link both valves open manually and use VRT360 until the new mixing controller is launched. It is not possible to mix LAN (ebus) and mains powered controls unless the multizone controller is UK launched - if they indeed have any plans to do so in the near future.
Our Vaillant rep has been promising us imminent multizone controls for over 2 years, thus my scepticism.
If you are fitting leading edge controls it is always best to get in a specialist who understands the manufacturer systems. Your installer has clearly not fitted ebus controls before and does not understand the issues.

I will probably be replacing the VRT360F with something similar and then switch the store of each night and then turn it back on in the morning when demand for DHW gets higher (It only takes 2 minutes to re-heat so not a problem). Can anyone suggest a replacement that will be as similar as possible to the VRT360F (Must be wireless)?
I hope the standard controls will resolve the problem.

The VR61 is available to UK merchants if they want it, but its not being actively promoted at the mo. Make some enquiries you may be surprised

There is a problem running the VR61 mixer with the domestic boiler range. Whilst it is available it was designed for the commercial boiler range and there are compatability problems. Vaillant advise that it should not be used with the domestic ecoTEC range.

Whilst there is a two channel heating plus hot water controller similar to VR65 coming out, there is no release date, and it certainly isn't available now.
