Noisy Extractor Fan

The instructions for that fan indicate that it does have a humidistat, but it's not adjustsble. Which is unusual.
It does have a "two speed" mode, though, instead of "humidity tracking"; you could try that. See figure 3 of http://www.envirovent.com/product-downloads/filterless_extract_fan_230V_V9_LR.pdf

Not really, no. It is the constant things which lead to excess humidity and troublesome condensation.

If you're leaving pans simmering constantly you must be making something illegal

When visiting the flats I used to look after, you'd be surprised that some felt like the tropical house at the zoo.

They would complain about condensation when one even had the bath left full of water.

I don't know why; there's no point asking or trying to explain to some people.
