A little late now, but don't recommend being off site with trades people you don't know.
My sister had some work done by the insurance chosen trades person, the work had to be redone, wasn't as extensive as yours by any means.
Had a car that got damaged a few year ago hand brake fail, sent the car back twice after seeing the poor/ lack of repair to the vehicle (it was never off loaded), had an independent come out to validate the state of the vehicle and what repairs needed doing that could be attributed to the incident, it found over £2k's worth of work was still needed, the insurance then wrote it off.

Work out how you would like it all to work.
Ask if its possible.
Then work through one thing at a time.
