I used similar (the same? cladco are a manufacturer) material from cladco https://www.cladco.co.uk/ on the rear aspects of both my gardenroom and garage because it's an inexpensive option. It's a bit of a pig to cut. I think you'd need a machine of some sort to do more than 1-2 cuts - it's hard work with a hand-held nibbler. You can of course, order sheets pre-cut to the size you need, but you may still end up with a little bit of cutting.
I reckon a DIY metal roof will be about 50% the cost of a DIY slate roof.
IMO no more or less challenging than slating. Get the sheets cut to exact length, then worst case is two width cuts which you could do with a hand nibbler.
