Small wall build

Having dug down and levelled off my garden last summer, I’m away to start trying to build a small garden wall, which will then be topped with slabs.

Just a query regarding mortar, pointing. Should I just point this as I’m going or build it all and point afterwards?

Point it as you go, as you lay them you’ll cut the mortar off flush, then fill any gaps and when it’s firmed up a bit joint it
