Just slip the new 'disc' on top of the old in the display 'pocket' ... Keeps the discs together and easy to find.

i think you have to do a SORN until it has an MOT. Can SORN at the post office, same process as taxing, updates DVLA computer straight away, so you can still tax it in, say, 2 days time. This sound the logical route anyway.
