Do you reckon then using 18mm mdf and those kitchen type hinges will be ok if i go with them?

all depends on door size support material thickness and number off hinges
the answers are all there if you work it out
go for 16" doors 15mm mdf and 5 fixings but no frame 4 if good quality hinges
no span greater 32" on the shelve or hanging rail below it
