you should have incoming and out going, so what is going to the psu
and what is coming out of the psu

Psu will have blown

Probably but you should test until you find the point of failure and not make assumptions.

if PSU blown there will be little or no output from the PSU.

Then have to decide if its cost effective to replace the psu if you can get the part or replace the whole unit, or replace the system with something else.

I have no idea how to test the PSU, would you be able to guide me please OR provide me a how-to guide?
I'm confident its the PSU but before I order a replacement, it'll be good to confirm its definitely the PSU.

the PSU has incoming mains and out going power to the panel.

so you need to measure the power being outputted from the psu, it isn't rocket science.

A quick update, new PSU has brought the alarm back to life.
I can't seem to reset the Event Logs I've got on it right now. Which means systems in trouble and it won't arm.
I've looked through the user guide and the installer guide but nothing so far.

the event log isn't important its the current condition that is.

whats the current fault?

Apologies for not replying for almost 4 weeks, just didn't get a chance to look at the Alarm panel.
Currently, panel is alternating between 'NOT READY TRBL' AND 'NOT READY HH:MM'.
I've got no idea how to work out what's causing this?

Sounds like time and date possibly needs programming.

I've just checked the date and time and they both are correct:
Date is set to DD/MM/YYYY format with 25/02/2020
Time is set to EU 24 hour format and the correct time is being displayed 16:20 right now.
What else could it be? Any suggestions?

Finally, the alarm is fixed!
The issue was one of the door sensor wasn't working.
