I have a plasterer taken on Labour only for full re-bonding and multifinish plastering of brick walls across the entire house.

I was going to buy Thistle bonding 25kg however he suggested buying Volden quick dry plaster bonding 25kg. This would save £200 quid (miniscule compared to total cost) but more importantly dries quicker.

I don't want to shoot myself in the foot and cause problems later. Any thoughts on the Volden bonding as I've never heard of it before.

I think it's a new product and not used myself so I don't know.
As for plaster price, phone around building merchants for prices.

You’d normally use hardwall or sand and cement not bonding over brick. Bonding’s for low suction backgrounds like dense concrete or board.

The volden stuff looks like a b&q own brand. Probably ok for the odd patch but I’d be hesitant to allow it to be used as a backing plaster for the entire job. You can buy a faster “30 min” bonding by BG if needed

We used to use browning plaster when we were doing renovation work.
Not seen it in a long time.

Not seen anyone use it for years, I think you can still get it tho. Didn’t it fall out of favour as the finished wall was quite soft and would dent easily so got replaced by hardwall? I remember browning being really light and fluffy when you laid it on and the 25kg bags were massive as it was so light.
