What are these screws used in an old step ladder?

Give over, John! Those of us who are carpenters refer to them as wood butchers (or handymen......)

Out of interest how would describe yourself? Carpenter, joiner or cabinet maker, perhaps all 3, it's not a loaded question I promise.

Trained as a carpenter and joiner (we used to do a longer apprenticeship encompassing site and workshop then), done a lot of fit out work over the years, both site and bench (restaurants, pubs, shops, hotels, etc), which was really higher end joinery at one time, I suppose, as it incorporates a lot of cabinetmaking skills such as veneering, spraying/French polishing, quality finishing, etc. So you tell me
