Win 10 laptop.

Taskbar set to auto-hide.

When streaming videos in full-screen mode (nothing dodgy - iPlayer/ITV/C4) every now and then the taskbar pops up.

I've not touched the mouse, or the keyboard, or the trackpad, but every 10 minutes or so it unhides.

Any ideas where I could start looking for what's making it do it?
 
Look in your startup apps/services.
Found in Task Manager.

Disable some that you know you are not really using in the startup tab, then if it still does it look at the services tab.

Doing this can also help reduce the amount of RAM being used all the time.
 
Is the mouse on a mat?

Sometimes, if the mouse is on a rough surface it can trigger movement which then makes the taskbar appear back again. Clean the sensor at the back of the mouse or leave it unplugged and see if that is the culprit.
 
Have you tried automatically hiding the taskbar in desktop mode before playing?
Take a look in 'Taskbar Settings'.
