Thanks for all your advice, much appreciated. I think I'll go just for the 3 pole isolator pull cord approach, with the cord near the light switch, and hope that I/the wife can remember to turn it on/off when we get up in the night!
Why not a simple time switch that prevents fan operation between certain pre-set times or a normal timer operated fan with a separate delay relay wired in so fan operation is inhibited for a pre-set period?

Those are obviously both electrically viable options, but somewhat more complicated. As for the time switch, that might not be acceptable in those situations (bathrooms without openable windows etc.) where the fan was required by regulations - since having it disabled for certain periods of the day (night) might well be regarded as non-compliant with the regs.
As an alternative fit a humidistat controlled fan - I have a Manrose one in my bathroom window which replaced a pull-cord operated one that my wife never remembered to turn on. If you get up for a pee in the night it won't come on, however when you have a shower it comes on automatically as the humidity increases and stay on until it is back below its adjustable threshold.
