You usually get a fair bit done by starting off identifying the ones you can see the connection of, e.g. cylinder stat etc.
Decorator's tape (masking tape) is great to make labels from and flick them around the cable.
That will only leave a couple to identify as described above.
If your tester has a beep, you can use that to check which wire does what on the room stat.
WARNING. More often than not you find blue/black wires not to be neutral, and "earth" wires used for live.
