Call my builder, or a carpenter - doors need shortening

A carpet fitter fits carpets/vinyl.
A carpenter alters doors.
There is no way I would ever expect a carpet fitter to reduce a door height, its like asking a dentist to sort your ingrowing toe nail out.
Carpenter, maybe £50 per door, for 1 or 2 or you will get him on a day rate, should only take 30 mins a door.
Some do. It's not all that difficult to trim most doors. Hand saw and a plane is all that's needed usually. There's also a special leccy door trimmer that trims doors without even having to the take door off. Lot cheaper than a carpenter.

A decent reliable Carpet fitter should have one in his van, whats the point of fitting carpets if the householder cannot shut the doors.
a extra charge of £10/15 per door trim and the tool will soon pay for itself.
