Control radiators using thermostat dial?

Just set the heating on constant (not timed) and set your thermostat to say, 10 degrees.
Not sure you can not sure what the lowest on that stat is.

You need to set the stats frost setting to 5deg and then switch it to 'OFF' That way the stat will only call for heat when it reaches 5 deg. If the boiler is still firing up then it can only be the boilers internal frost setting that's doing it and that cant be changed. try a thermometer next to the boiler and see how cold it is in the location of the boiler.

the OP is leaving the thermostat switched on, so all programmes will be still active, the frost stat on the thermostat is factory set at 5C but can be adjusted in parameter D2 between 3c and 10c, with the programmer off the frost stat is automatic, but with the programmer on all programmes previously set, will still be active
 
The boiler will warm itself if the temperature of the domestic pipework within the boiler drops to 6 degrees or the heating pipework drops to 4 degrees; this is independent of external controls. Relying on this settings doesn't protect the house as areas away from the boiler may be colder.

If the room thermostat batteries run down the receiver by the boiler will default to ON 24 hours a day to make sure the property doesn't freeze.

My advice would be follow Mottie, turn the thermostat to 10 and 24 hours a day. How long are you away for? If the gas used is likely to be more than the cost of a freeze up and burst pipe take a chance, if not, protect the property.
