Dry packing upside bricks/ frogs above new steel

Beam in. Padstones in. Now I need to dry pack the brickwork above the steel. The bricks are frog down - any tips on the best way of tackling this? Or pack as any other but expecting to use more mortar.

Dry pack with slate at every other perp joint, then fill with a strong semi-dry 3:1 or 2:1 mix well packed between the packing.
