Exploding phone

If lithium batteries are so unstable, why are they in common use?

High power capacity and light weight, memory effect free charging.

There are many other battery technologies in development, in the future people will look at lithium and go "did we really use that carp", in the same way we look at "horrors" like asbestos and the safety of 1950's cars. It's the best we have at a economically right price right now.

Did you know Lithium ion batteries loose 20% of their capacity a year? Regardless of whether or not you use them?

Apparently to combat this you should keep them in a fridge, where the lower temperature means they will loose less capacity per year.

They are prone to explosion when hot, punctured, short circuited.

And deep discharge ruins them beyond repair. This is why your mobile phone turns itself off when its too low. Theres charge left, but you cant use it because doing so would damage the battery.
