how to batter?

I really outght to join a cookery forum, keep asking cooking questions ( well it's kinf of DIY.. making my own food.. :) )

anyway..
tried making some "chicken nuggets" by dicing some chicken breasts and "battering" them..
but the batter method I googled didn't turn out too well..
it said to flour the chicken then dip in milk and flour again then fry..

not much of a batter coating really..
so anyone got a better way that makes it something like chipshop batter?

that first one is exactly the way I did it.. but no egg.. the site i got it from said the egg makes it more like pancake batter.. spongy rather than crispy..

Flour. (Not plain... obviously). :rolleyes:

Mix to the consistency of semi-thick gravy. Too heavy.... its falls off in the fryer. Too light... it wont hold onto the meat in the first place.

Season well and gently lower the chicken into the oil. (I do it with beef dripping). :D

never use egg in a batter. and use ground rice instead of flour. only good for deep frying though.
