knife sharpener?

One more thing for after you've sharpen your knifes. Try cutting wet newspaper, if your knife isn't truely sharp then it will tear and not cut the wet paper.
When I trained as a chef we shaved the hair on the back of our hands to check blade.

Spyderco Ceramic fine grit whet stone in my book is the best not that you will get your knife sharper than with Japanese whet stones but I have had mine for ten years and its not worn at all even without using water in the field yet I can still put an edge on my bush craft knife good enough to shave with.

I remember using the back door step and a blob of spit(the step was proper stone) always got a decent edge. :)
