It was Turkey's refusal to acknowledge the Armenian massacre that led to France virtually vetoing Turkey's accession.
Nothing to do with Islam, although there is a general wariness in Western Europe of allowing a predominately Muslim country of joining the EU. But Human Rights is the over-riding reason for objection to Turkey joining the EU, and the simple but obvious fact that Turkey is predominantly not in Europe.

The country most strongly opposed to Turkey's accession, for no apparent or publicly acceptable reason, was Austria.

Greece didn't actually veto Turkey joining, they made a pre-condition of Turkey recognising Cyprus.
It was Cyprus that actually blocked Turkey joining.
