yorkshire puddings

I was born in Yorkshire, as were my parents, grand parents ,great grand parents, great great grandparents etc back until the 17th century, so don't tell me how to make Yorshire puddings. Letting it stand makes no difference at all :evil:

The bit about using beef dripping (lard) and getting it smoking is spot on. But before anyone ponces on about putting the batter in a baking tray divided into individual portions, please, understand, you are obviously a southerner. It comes as a huge stodgy mass in a roasting tray. Don't bother to argue, you are demonstrably wrong if you do :LOL:

I lurrrve winter food and another thing I like is hot pot.
this is another much varied dish and I would like your suggestions.
I also like home made rice pudding... yummy yum yum and I like the skin too.

Toffee, I'm not going to bother arguing with any of them on how to make YP but this is how I make mine.

4oz plain flour
1/2 pint milk
2 eggs
salt and pepper.

You can adjust the quantities but this should make 12 small ones.

Whack it all into a blender and whizz on high speed for a minute or so. Leave to stand for about 45 mins - 1 hour. Melt some beef dripping in the oven (either small or large trays - my kids prefer small as they get more :rolleyes: ) until it is smoking - oven should be on about 200c

Whizz again and pour into smoking hot trays and get them in the oven asap. Small ones usually take around 20 mins and don't forget to save some of the batter for gravy - I usually use 2 beef and 1 veg oxo. Veg water and a dash of gravy browning with it. Makes gorgeous gravy to go with beef.

My sis-in-law is a Yorkshire lass born and bred and loves my yorkies. i've never had a failure with them yet, i'm pleased to say :D

Who cares whether it's the right or wrong way to do them but mine are always fine :LOL:
 
No idea how to make them even though Yorkshire born and bred, but I must say that the big ones are far superior to the individual ones.

My Gran used to swear by adding a splash of ice cold water just before whacking it in the oven. Seemed to work.
 
Anyway.....

Never mind yorkshires.......what about the perfect pancake batter?

There is a subtle difference, you know.
 
The best bit of pancake making is definately the tossing of them.
Hubby is better at it than me but it Im getting better.
We did them at work and all had a go.... there were more dropped pancakes than edible ones!!!
 
I always thought that yorkshires used to be served before the meal because there wasn't enough dosh for much meat. My ma reckons that the kids used to be told that the more yorkshire pud they ate before the meal the more meat they could have!
When I was young we used to save some for after the meal and eat it with golden syrup.

Pancakes.... 2 eggs, 8oz plain flour, 1 pint milk. I ate mine tonight with homemade lime curd and plain yoghurt and I know it sounds awful but I think they were the best I've had. My wife likes them with currants added to the batter.
 
yes Ive heard that too hermes and read it too in a james herriot book (ha ha , I know).
 
well... I didnt want to say.. :oops: :oops:
at first we threw the dropped ones away... but as the ratio was probably 80;20 in favour of dropped ones.. we had to eat those or starve :LOL: :LOL:
