Sichuan pepper isn't pepper. It is a really nice spice, and is just fantastic when substituted for peppercorns in steak au poivre, but it will subtly change the flavour of anything you use it in, which may not be what you want.

Indeed it is the berry of the prickly ash (Latin: Xanthoxylum Americanum, Mill., X. fraxineum Willd.; X. Carolinianum, Lamb) Still it tastes good in oriental dishes :D

Black pepper (Latin: Piper nigrum) is produced from the still-green unripe berries of the pepper plant. The berries are cooked briefly in hot water, both to clean them and to prepare them for drying. The heat ruptures cell walls in the fruit, speeding the work of browning enzymes during drying. The berries are dried in the sun or by machine for several days, during which the fruit around the seed shrinks and darkens into a thin, wrinkled black layer around the seed. Once dried, the fruits are called black peppercorns.

White pepper consists of the seed only, with the fruit removed. This is usually accomplished by allowing fully ripe berries to soak in water for about a week, during which time the flesh of the fruit softens and decomposes. Rubbing then removes what remains of the fruit, and the naked seed is dried. Alternative processes are used for removing the outer fruit from the seed, including removal of the outer layer from black pepper produced from unripe berries.

Actually, I blame the racists who introduce this sort of thing into any debate they can. They want to spread the idea that using the word black in the context of black pepper, black cars, black bin-liners etc is somehow racist. I'm not saying it's their idea, or that they believe it, just that it's an idea they try to put forward.

It's a ludicrous idea, which is exactly why they do it. Because so many people find it ludicrous, they foster an environment where more people think it is ludicrous to complain about the word, and they make it more likely that they can start to get away with phrases like "black migrants flooding our shores", "black migrants taking our jobs", "black muggers making our streets unsafe".

Think about how often you see a racist try to lump criticism of his statements into the idiotic "PC" mish-mash of other complaints about the use of the word "black".

i agree ;)

The whole black pepper/Italian thing: most restaurants I have visited in the Lazio region of Italy didn't have grinders, just cafe-style shakers!

I think it is a regional condiment thing, like how in some parts of the UK you can get gravy or curry sauce in chipshops, but in others you can't (in my experience, this is a northern thing and I even know a Bradford chap who has gravy and chips with pizza, so all the gravy soaks into the pizza base   )

Sounds yummy!!

BTW, you absolutely cannot get a decent chip in the south. Call that a chip, Ha!

You're missing 2 carbons and 3 hydrogens, also it's in 2D and doesn't show the steric properties of the molecule

5/10 see me after school :D
