Need something to control the power going into USB heating element

But if I have to get up and move every 5 min - they're a pain, as I have to plug and unplug. My next project after solving the temp control would be a magnetic connecter so I can connect and disconnect easily
Or a powerbank so that power source goes with you too?

Magnetic "Pogo Pin" connectors are readily available - both with and without "leads"

I use a two pole, concentric version, on my phone, to charge it. A tiny adaptor plugs into the socket, then a usb lead matches it. When they get near, they snap together. One lead in car, one at the side of my bed, I built into a DIY stand, one in the living room.
