I blame Mrs Mottie who types up consultations for a liver consultant. She now considers herself a fully fledged liver expert! I had orders not to get anything over 12.5%, preferably less. No fun!
 
Finished off one bottle and made a start on another last night with our turkey curry!

You know that letting wine "breath" is pointless as it doesn't make any difference. It's another urban myth that it does.
Ive drunk enough red wine to know that it tastes and feels much better if left open to warm a little.
Ive been given some wines that have been,to my taste pretty bad and left for mulling but on tasting the next day have been very acceptable.

Well, running samples through a gas chromatography machine, which is much more sensitive than anyone's palette show no changes in the wines chemical signature, so it must be psychological. But if you want to carry on, then by all means go ahead.

Well its a bl00dy good job humans drink wine and not machines then :)
