I have a degree in baristology. I'm currently studying for a PHD in making pot noodles, this is a bit more challenging though.

To make the milk hotter... steam it for longer! Simple.

Steamed milk is best at 60 to 65 deg, 70 deg if you want it really hot.

there is a fine balance between best flavour and temperature - too hot spoils the flavour of the milk

as a guide, hold the milk jug with your hand wrapped around it, when it starts to get too hot to comfortably hold its around 55 to 60 deg, so hold the jug by the handle and steam for a few more seconds.


semi Skimmed or full fat is the best milk for steaming for flavour although skimmed is easiest to create thick foam.


one way to get thicker foam is to stick the empty jug in the freezer, so the milk stays colder longer giving you more time to create foam before the temp is too high

I often steam mine until it bubbles (boils). I actually like the taste of cooked milk. Although with skimmed it normally fills the cup before this happens anyway, so you have to stop.

But doing things how you like probably isn't tolerated in the Church of CostaBucks, where everything must be done according to strict rituals from some unknown source.

"Have it your way" is my way. Just had my over-steamed Beko-Tesco creation, made at some unknown temperature, random humidity and any old altitude. Bloody lovely it was, definitely didn't taste of bullshit or waffle anyway.

We almost always have skimmed milk, so I haven't tried otherwise for years. But we had visitors so got some semi-skimmed in. It definitely doesn't froth as much, but it does taste better. You get the nice creamy sweetness you get in a Costalot.

All in all, I'd say semi-skimmed is superior despite being less frothy.
 
Sage and Breville are the same company and as such same machines. Armed with this I bought a Breville Mini Barista (from Curry's) which is similar to the Sage mini Barista but Breville £169 Sage £350 and they are basically the same machine from the same manufacturer. I am delighted with the Performance of the Breville machine which I have had for nearly 2 years, it does an amazing Crema and with the Milf frother, produces an excellent Cappuccino or Flat white.
How Sage can justify a £180 difference is a mystery to me other than a rip off.
