How would I obtain that information.

Looks like you have 5 expanders and 3 keypads on that network , without knowing what devices are connected , and if there are any powered expanders , at a guess it’s overloaded ….max 900ma on the network

a 640 is a big panel to be looking at with little knowledge.

as suggested but I would do confirm devices for each set of cables, this may fill in some of the gaps as to whats on each set of cables.
It may help to find things too if you dont know whats where. it be unusual to jump numbers on keypads and expanders but it does happen.

so with 1 set of cables in what shows up in confirmed devices. repeat with other sets of cables.

3 keypads x 100mA, 5 expanders x 100mA and thats not looking at devices, without powered expanders its is likely to fall over at some point.

the panel is seeing more than 2 expanders, according to the addresses on the boxs its not seeing expanders 1 and 2 but 3 4 and 5 on network 1
 
How should I proceed ? Just continue to identify the devices on each set of cables?
I should note that of the three sets that were connected I have only rewired two so perhaps those intial expanders are on the set I didn't wire in.
 
if you do confirm devices on each set of cables you can see which is on each set. (this will make life easier going forward).

You also need to identify each expander, but you should also heck what is on the other networks.

As a rough rule of thumb 2 keypads and 2 expanders per network/ powered PSU, but it does depend on what you have wired to them.
 
okay so per wire set we have:
set 1 - Expanders 3-6 (inclusive);
set 2 - Keypads 2 and 5;
set 3 - keypad 4;
set 4 - Expanders 1,2,7 and keypads 1, 3, 4
 
I believe there was one set which wasn't connected but three defintely where.
