Italian job might suit you.

when I order I usually find they’ve been roasted within days of despatch

Do you order one bag at a time ? How long was it before you found the perfect coffee for you?

I tend to buy 2 or 3 bags at a time, but haven’t done for a while

Personally I like their fudge blend, mocha Java, chatswood and italian job - I like them all.

to be honest getting the espresso right makes more difference than the coffee bean.

I have a manual espresso machine which can deliver great coffee and a Mazzer mini grinder, but it’s too much of a faff and I’ve ended up mostly making lattes with a Lavazza pod machine and a milk steamer.

I would like to buy a bean to cup machine like the Sage

Anyone know how many different variety of beans Costa and other coffee shops use? I don’t see them grinding different beans for different coffee's. One, I believe, which says more about the process that the actual bean.

The magic ingredient in most special coffee shop drinks is sugar.

Getting back to frothing, I find that skimmed milk works really well, whole milk OK but semi-skimmed seems to be the worst of the lot. Perhaps high or low fat is OK, medium just doesn't work for some reason.

Well, that makes no sense at all. Nonetheless, I've asked Mrs filly to pick up a bottle of skimmed on the way home.

Every time I go into a coffee place, it's Semi-skimmed they are using and, it seems to froth up for them ok.

I thought they used full fat unless you ask for a 'skinny' in which case I thought they used skimmed?

I actually paid attention in Costa one day, just because I was curious. After that, I noticed it in a local independant.
But, I suppose they will all have their preferencies.

Let us know if my nonsense theory makes any sense. Only limited testing of the other two, I almost always use skimmed, it works a treat and doesn't collapse.

I'm currently sipping a coffee with the creamiest, stiffest head experienced to date. I'm shocked, Mrs filly is shocked.

Skimmed milk is a winner.

I could do with a good stiff head. I'll give it a try.

My machine is coming today. Its my birthday tomorrow I'm not sure I can wait to unpack.

Once it's steaming away I'll be hoping for a creamy stiff head.
